Risotto with Pumpkin Sauce – Salsiamo alla Zucca

Risotto with Pumpkin Sauce: let’s discover together how to prepare it!

  1. Clean 80 g onion;
  2. now finely chop it;
  3. put 2 tablespoons of oil and a knob of butter in a pan;
  4. warm it up and then add the chopped onion;
  5. after having wilted the onion, add the rice and let it toast (for half a minute);
  6. now mix it all and pour in 600g of vegetable broth, a little at a time, using a ladle;
  7. cook the rice as usual (if you have used, as recommended, the quick – cooking rice, it will take 5 minutes);
  8. add a large knob of butter, 3 tablespoons of grated Parmesan cheese and Nova’s Pumpkin Sauce – Salsiamo alla Zucca;
  9. add the salt, if necessary;
  10. serve it hot;
  11. you may add a sage of leaf to decorate the dish.

Raw ham ravioli with Mushrooms Sauce: follow the recipe and discover how to prepare this tasty dish!

Follow our recipe and season your raw ham ravioli with Nova’s Mushrooms Sauce – Salsiamo ai Funghi!

Here’s how to prepare it:

  1. Fill a pot with plenty of cold water and bring it to a boil.
  2. When the water has come to the boil, pour the ravioli in it and add salt to taste
  3. As soon as ravioli are ready, put  them in a pan using  a skimmer.
  4. Add a ladle of cooking water to the ravioli together with 280 g of Salsiamo ai funghi- mushroom cream.
  5. Chop all the “ Famigliola Gialla” mushrooms  and add Salsiamo ai funghi- mushroom cream.
  6. Gently mix over low heat for 1 minute.
  7. Add Parmesan cheese and a handful of chopped walnuts to garnish the dish.
  8. Put it on a plate and serve it.

Spaghetti with Nova Pitted Leccino Olives

Today we offer a tasty recipe with Leccino Olives of Nova. Follow all the steps indicated by our chef and success is assured!

  1. In a saucepan combine the anchovies with fennel seeds and melt gently.
  2. As soon as you get a thick bottom, turn off the heat and add 3 tablespoons of stoned Nova Pitted Leccino Olives.
  3. Grate the caciotta in another container and put it aside.
  4. In a pot with boiling water, add spaghetti and cook.
  5. Use a ladle to scoop some spoonfuls of starch that forms on the surface during cooking and pour it on the mixture with anchovies.
  6. Boil the spaghetti and drain them when they are still very “al dente”.
  7. Combine the pasta with the seasoning, over low heat.
  8. Only when it is warm, add 2/3 of the caciotta and stir well. Attention! It is very important not to add the cheese to heat, otherwise the passage in the oven will tend to crumble.
  9. Line 4 portions of spaghetti with 4 aluminum sheets each and distribute the spaghetti inside.
  10. The remaining caciotta cheese (1/3) must be worked with a little olive oil, so as to form a creamy mixture.
  11. Pour the mixture and distribute over the 4 portions of spaghetti the remaining olives,
  12. Complete with another round of oil and close the nests with their own aluminum paper.
  13. Bake at 180 a.s. for about 20 minutes
  14. Each diner will open their own foil.

Spaghetti with Pasta&Bruschetta Spicy Sauce – Piccantella

A quick dish with a strong flavor for those who love strong and spicy tastes!
Follow the directions of Nova’s Chef and delight your guests:

  1. Fill a pot with water and bring to a boil.
  2. Meanwhile finely chop the garlic and sauté in a non-stick frying pan with a drizzle of oil.
  3. Add Pasta&Bruschetta Spicy Sauce – Piccantella with 2 tablespoons of water.
  4. Uniform with a spatula.
  5. Season to taste with salt and pepper and heat over a moderate heat for 5 minutes.
  6. When cooked, add the fresh basil cut into a pattern to flavor.
  7. Pour into the pot with boiling water, 380 grams of spaghetti and salt to taste.
  8. Boil the spaghetti.
  9. When the spaghetti are almost ready, keep some cooking water in a glass, enough to fill 3 cm.
  10. When cooked, drain the pasta and pour into the pan with the dressing and the water of the glass.
  11. Mix the ingredients well so that the sauce is mixed evenly with the spaghetti.
  12. Finally, serve the spaghetti with Spicy Sauce adding a little olive oil raw and grated cheese at will!
